One Pot Lazy Lunch

A Hong-Kong Style lunch that embraces two elements of cooking most of us desire for: fast and simple. For people who don't like to wash dishes, like myself, this dish is the perfect dish for you. There is only one pot for you to wash by hand...and a bowl with chopsticks that you can stick in the dishwasher.

Ingredients: 

  • A handful of any leafy greens
  • 1 pack of instant noodles or udon
  • 2-3 table spoons of chicken stock (or the seasonings included in the instant noodles)
  • 5-6 slices of luncheon meat
  • 6-7 frozen dumplings or gyoza


Instructions:
1. In a bowl, empty seasoning packets or chicken stock.

2. In a pot, bring water to boil and scoop 2 spoonfuls of boiling water in a bowl using a ladle. Cook noodles according to packaged directions. Set noodles aside in the bowl once cooked. Add dumplings and luncheon meat to pot and boil for approximately 5 minutes. Add leafy greens to pot and boil for another 2 minutes. Remove pot from heat and use chopsticks to arrange your cooked toppings to your noodles.

Midweek Madness

Midweek is always the craziest, meaning that I have little to no time to cook. For this week's unexpected midweek dine out, I visited Banzai Sushi House to eat some sushi to fill my empty stomach. Cheap, fast, and enormous portions, this small sushi house is the place to go when you are busy, hungry, and living on a small budget (typical student life!). Were does everyone go for cheap eats? Quick and Easy Breakfast

Wow! It has been another hectic week. With the start of the new summer semester, I have been slowly adjusting to the regular routine again. However, having only one online course has proven to be a struggle when it comes to getting into the rhythm of things. I go to work more often and study less than usual. I continue to go on weekend adventures and exploring different hiking trails two to three times a week. No matter how my schedule looks like, I am still VERY, very busy!
