Food Prep Like a Boss

In the midst of exam season, we all want to save ourselves time when it comes to making our lunch. However, if you are like me who wants to eat healthy, save money, and make something that is delicious, yet simple enough to make in less than 30 minutes (depending on how fast you can chop your veggies), this is the perfect dish for you!

This week's feature is the insanely satisfying salmon fillet with saute veggies and linguine in tomato sauce. This dish requires a little more technique than my previous dishes, however, it is still easy enough to make for any beginner cook regardless of age. The best part about this dish is that you can make a whole week's worth of lunch! Simply reheat it in the microwave and you'll have yourself a delicious and healthy lunch ready for you to eat. It'll save you from the temptations of buying fast food for lunch and about $100 worth of buying pre-made meals from your local grocery store, which can be filled with lots of unwanted fat. Try this salmon dish today!

Ingredients
5 Salmon Fillets
Salt and Pepper, to taste
Sugar, to balance the sourness of the tomato sauce, as needed
1/2 Lemon
2 Tablespoon of chopped fresh dill
1 Pack of Linguine
2 Tomatoes
1 Onion, sliced
1 Broccoli, cut
1 Zucchini, sliced
3 Cups of Spinach
2 Teaspoons of Minced Garlic
1 Teaspoon of Sugar
1 Jar of Tomato Sauce
Olive Oil

Instructions
1. In a large pan, space salmon evenly and squeeze lemon onto salmon. Rub in salt and pepper on both sides of each fillet. Sprinkle dill on top of each fillet and set aside in the refrigerator.

2. Bring water to boil and cook linguine according to directions. During this time, add oil onto a pan and saute vegetables until they are just slightly undercooked. Once the linguine is cooked, transfer it to the pan and mix it with the veggies. Add tomato sauce, salt, pepper, and sugar, if the tomato sauce is too sour. Remove from heat and split into smaller portions once desired taste has been achieved. Wash pan before the next step!

3. Add olive oil and heat pan to medium heat. Sear salmon on each side until salmon is cooked thoroughly (this should be less than 10 minutes)

4. Serve on top of pasta and ENJOY!

Whistler Features: MOOOOOOOO!

On a hot sunny day next to mother nature, one can only imagine relaxing under the trees...eating ice cream! ...At least that was me. While on my trip in Whistler, I had a chance to stop by their specialty ice cream store: Cows. Cows is nothing like your ordinary ice cream shop. It has a central utter theme to it. Nearly EVERYTHING in the shop is Cow related. Take this "Moovenger" shirt for example. I killed myself laughing with all the Cow puns in the store. Since Cows is famous for their ice cream, I decided to try their Oreo Cookie Ice Cream and Cookie Dough Ice Cream. I finally understood why there are always long line ups for ice cream out the door. The ice cream was DELICIOUS! It was soft enough to eat, yet hard enough to retain its perfect spherical shape. I also loved how their ice cream contains just the right amount of Oreo cookies and cookie dough. Many ice cream shops often serve ice cream with too little toppings mixed in. Another great perk of Cows is that ...

Popbar: Sweet Treats on a Stick

After a nice biking trip around Vancouver, I took the skytrain to Popbar at Metrotown to enjoy a small treat. Popbar is an unique dessert bar that sells frozen treats, from gelato to sorbets, on a stick. With many flavours to choose from, this new dessert place is the place to go on a hot, sunny day. For myself, I got the vanilla pop Gelato dipped in dark chocolate and no toppings (I like my gelato as plain as possible). And, as expected, it was DELICIOUS. The flavour was just right; not too sweet, not too milky, just enough to bring out the taste of vanilla with the crunchiness and bitterness of the dark chocolate fudge. Check out Popbar on your next sunny day out!
